Ena Ménager Derenoncourt's mango pikliz recipe published by FAO

The Food and Agriculture Organization of the United Nations (FAO) has just published A taste of SIDS – Food, culture and resilience of Small Island Developing States, a book celebrating the cuisines and local foods of Small Island Developing States.

Among the three recipes representing Haiti is Ena Ménager Derenoncourt's mango pikliz (pages 50–51). It gives a new twist to this staple of Haitian meals by adding Francique mango, prized for its flavour and juicy, nearly fibreless flesh.

"As a producer and exporter of Haitian mangoes, I wanted to give a classic condiment a new twist using one of the country's most iconic fruits."

The book also highlights the place of mango in Haiti: more than 100 varieties grow across the country, and the Francique has long been an important export. Welcome international visibility for the sector.
